Set it up once

Every tip-out rule is one of two things: a percentage of some number from your shift, or a flat amount. Write your house’s policy in those terms, save it under the name of the shift, and every night after that is your sales figures and nothing else.

Percentage of a sales figure — total sales, food sales or alcohol sales. This is how most bar, busser and runner tip outs are written.
Percentage of tips — common for barback tip outs, and for houses that pool a share of everyone’s tips.
A flat amount — often the host stand.
A percentage of a custom figure — for the rule your house has that none of the above describes.

The number that matters

The rules are written against sales, but what you feel is the share of your tips going out. On a $612 night with $91.50 in tip outs that is 14.9%. Run the same rules on a night where the same sales only produced $400 in tips and it is 22.9% — same policy, very different night. Cash, credit and what you walk out with

Tip outs are often paid in cash out of your apron while your credit tips arrive later on a paycheck.
